The Steward is an essential member of the Food & Beverage team dedicated to providing exceptional quality and service to our guests. The Stewarding team works tirelessly behind the scenes making sure that every piece of silver shines and every plate sparkles. Stewarding ensures that each outlet and function has an adequate supply of clean dishes and silverware and also keeps the kitchen and the “heart of house” clean and safe.
Job Responsibility:
Clean and sanitize china, glass, and silver using the dishwashing machine
load and unload dishware and flatware from dishwashing machine and store properly
Clean and sanitize all pots, pans, and kitchen utensils
safely utilize and store all cleaning compounds, chemicals, and materials
Clean, dust, seep, mop, polish, scrub, wash, strip, and buff in all kitchen production areas, hallways, including purchasing hallway and loading dock
Maintain the cleanliness of cafeteria including sanitizing tables, chairs, walls, floors, hotline and salad bar
restock condiments and paper goods
restock and breakdown plates, flatware, glasses, all food and beverage items
Set up salad bar items
set-up hotline with food retrieved from kitchen
Date all food containers and rotate as per policies
check pars for shift use, determine necessary preparation, freezer pull and line set up
Note any out-of-stock items or possible shortages
return all food items not used to designated storage areas
assist in setting up plans and actions to correct any food cost problems
control food waste, loss and usage per policies
Review daily requisitions and complete, as appropriate
set up, maintain, organize and breakdown of all workstations in all work areas
Banquet set up, and any other duties related to the Banquet Steward position
Ability to ensure safety procedures are followed and able to notify security of any accidents or injury
To report equipment malfunctions promptly and accurately
Perform any other tasks or projects as assigned by hotel management and staff
Respond properly in any hotel emergency or safety situation
Requirements:
Reading, writing, and oral proficiency in the English language
High school education or equivalent experience
At least 6 months experience within the same or similar position with Four Seasons or other organization
Hotel or restaurant experience preferred
Ability to lift up to 50 lbs
Comfortable around industrial size dish machines
Ability to learn operation of dish machines
Strong communication skills
High level of attention to detail
Strong work ethic
Ability to multitask and prioritize
Flexible schedule
Ability to work all shifts, weekends and holidays
US work authorization is required
