Full-time Sous Chef to join Convene || etc.venues by Convene’s prestigious culinary team at our beautiful venues in London. This position requires experience in high-volume environments with a focus on presentation and conference-style catering. As a pivotal part of the Convene culinary team, you’ll assist and deputise for the Head Chef in the management, preparation, delivery & presentation of all Food and Beverage with the aim to provide the highest level of client service within budget.
Job Responsibility:
Ensure prompt service of all meals and services to company standards
Under Head Chef instruction, prepare & present food for restaurant consumption
Assist with planning and costing of menus
Ensure preparation and presentation comply with current catering standards
Prepare and assist at special functions outside normal hours
In Head Chef's absence, assist with recruitment of kitchen team
Assist Head Chef in managing back of house food service team, implementing training
In Head Chef's absence, hold weekly team meetings
In Head Chef's absence, manage performance issues
In Head Chef's absence, prepare weekly staff rota & timesheets
Ensure high standards of appearance in catering department
In Head Chef's absence, order food and beverages
In Head Chef's absence, liaise with facilities supervisor to order disposables & cleaning items
In Head Chef's absence, ensure waiting staff are familiar with daily menu
Ensure client requests and comments are responded to promptly
Assist Head Chef with serving on hot counters
Liaise with events team to determine forthcoming events
Conduct quality and standards checks
Have presence in all restaurant areas
Ensure high level of service from food service team
Become familiar with venue budget and business plans
Work to keep food and beverage expenses in line with budget
In Head Chef's absence, administer invoices
Ensure effective stock rotation system
Ensure adequate stock levels
In Head Chef's absence, provide monthly stock and purchasing information
In Head Chef's absence, control staff budget for temporary staff
Ensure all health, safety and fire regulations are adhered to
Ensure high standard of personal cleanliness and hygiene
Wear correct standard of dress or uniform
Ensure kitchen and bistro are well maintained
Ensure safety and hygiene regulations are adhered to by staff and visitors
Ensure stores and areas of potential loss are secured
Report any loss immediately
Ensure COSSH and HACCP regulations are adhered to
Assist Head Chef in writing & implementing Risk Assessments
Perform regular maintenance checks in catering outlets
Attend bi-monthly food meetings and contribute to projects
Carry out reasonable management requests including duty management shifts
Build good working relationships with all venue team areas
Support venue team with client events outside normal hours
Attend company events as requested
Attend training courses as requested
Requirements:
Must currently reside in the UK and be able to work in the UK without sponsorship
Experience in high-volume environments with a focus on presentation and conference-style catering
