Redcape Hospitality is looking for a passionate and experienced Sous Chef to help lead the kitchen at The Courthouse Hotel — a buzzing inner-city venue right in the heart of Darlinghurst. If you love fast-paced services, great pub food, a lively crowd and being part of a tight-knit kitchen team, this could be the role for you. Working alongside the Head Chef, you’ll help lead daily kitchen operations, support and develop the team, and deliver the quality food our locals know and love. You’ll also have the chance to collaborate with Redcape’s Group Executive Head Chef and General Manager – Food, giving you exposure to experienced hospitality leaders and genuine opportunities to grow your career.
Job Responsibility:

Requirements:
Proven leadership experience in managing and motivating a kitchen team
Strong culinary skills and knowledge in food preparation, recipe consistency and maintaining high food quality
Ability to foster a customer-first culture
Financial acumen, with the ability to manage kitchen costs, achieve revenue targets and meet budgeted goals
Proficient in recipe and menu management software
Experienced in rostering and labour cost control
Strong administrative and organisational skills
Experience in maintaining compliance with food safety regulations, WHS standards and legal obligations
Excellent communication skills
Strong time management skills
Demonstrated ability to develop and train kitchen staff
A proactive and solutions-focused approach
Commitment to maintaining high standards of cleanliness, organisation and operational excellence
Flexible availability to suit prep, lunch & dinner services across 7 days
Certificate III in Commercial Cookery and/or Kitchen Management
