Working in our Holnicote Country House we provide a retreat for up to 55 guests who stay with us for guided or self-guided walking tour holidays. We always know when and where our guests need serving. We know the number of guests we will be hosting each week, and our mealtimes are fixed. We plan our menus in advance and get pre orders for lunch and dinner.
Job Responsibility:
Support the Head Chef to prepare and serve Traditional British menu (Breakfast, packed lunches, 3-course evening meal)
Manage the kitchen in the Head Chef's absence including implementation of Health & Safety
Develop and supervise Chef, Kitchen Assistant and Kitchen Porter staff
Perform stock take duties and ordering from external suppliers
Requirements:
Experience at supervisory level in a busy professional kitchen is essential
Mature approach to food preparation and the business
Knowledge of HACCP, The Food Safety Act 1990 (including Allergen Legislation), The Food and Hygiene Regulations and The Fire Regulations
Ability to be part of a team
Flexible to work evenings (9pm finish) and weekends
Nice to have:
Experience working with Fresh Ingredients and creating a traditional British cuisine
