The Sous Chef is a senior leadership role within the Florie’s Culinary team, supporting the Executive Chef in overseeing daily kitchen operations at one of the most distinctive dining experiences in the United States. As part of the partnership with Michelin-star chef Mauro Colagreco, this role ensures exceptional quality, creativity, and consistency aligned with Florie’s recognition as a Two Michelin Keys restaurant. The Sous Chef leads and develops the culinary team, drives operational excellence, and contributes to an elevated dining experience that reflects both local inspiration and global culinary innovation.
Job Responsibility
Lead, train, and mentor culinary team members, ensuring performance aligns with Four Seasons standards
Plan, organize, and direct kitchen operations, ensuring consistent preparation and presentation of all food items
Assist in menu planning, recipe development, and maintaining high standards of culinary execution
Manage labor and operating expenses through effective scheduling, purchasing, and inventory control
Ensure compliance with all food safety, sanitation, and hygiene regulations
Maintain quality control systems to ensure consistency in portioning, plating, and overall product
Oversee receiving and inspection of food products to ensure quality and adherence to specifications
Collaborate with leadership and other departments to support operational needs and guest satisfaction
Participate in operational meetings and ensure effective communication across teams
Support hands-on food preparation and kitchen operations as needed
Requirements
Degree in culinary arts, hotel/restaurant management, or equivalent experience
3–5 years of culinary experience or 1–2 years in a supervisory or leadership role
Strong leadership, coaching, and team development skills
Advanced culinary knowledge and operational expertise
Experience managing food cost, labor, and kitchen budgets
Strong knowledge of food safety and sanitation standards
Ability to operate kitchen and food & beverage systems and equipment
Strong communication and organizational skills
