We’re looking for a passionate Sous Chef to help lead the kitchen team at Totti’s Lorne. Working closely with the Head Chef, you’ll play a key role in driving service standards, mentoring the brigade and ensuring every dish reflects the quality and consistency the venue is known for. You thrive in a busy kitchen, lead from the front during service and take pride in developing the chefs around you.

Requirements:
2+ years' experience in a high-end or hatted restaurant and love working with the best seasonal produce
Adaptable, organised, and professional with an eye for detail
Experience with charcoal oven and grill would be ideal or keen to learn
Knowledge around preparing shellfish, whole fish and roast meats preferred
Work in a busy open kitchen, so being well presented and cool, calm and collected is important
