The Sous Chef is a key leadership role within the Sensei Lānaʻi culinary team, reporting directly to the Executive Chef. This position oversees the daily operations of the resort’s kitchen, ensuring exceptional quality, consistency, and efficiency in all culinary offerings.
Job Responsibility:
Supervise and coordinate day-to-day operations of the kitchen to ensure smooth workflow and high-quality food production
Support Chef Leadership in menu planning, recipe development, and food presentation standards
Manage food costs, portion control, and inventory to minimize waste and maximize profitability
Maintain the organization, purchasing and receiving of all food items in the storeroom and the wall in and freezer storage of the hotel
Maintain proper inventory and product rotation and ordering to minimize product waste
Oversee and create cyclical menus for the Employee cafeteria and be able to train and manage cafeteria staff on implementation of cafeteria menus
Maintain high standards of hygiene, cleanliness, and safety in compliance with health regulations
Train, mentor, and develop culinary team members to promote skill growth and career progression
Ensure consistency in food quality and service across all outlets
Oversee production control and monitor adherence to recipes and portion standards
Participate in recruitment, scheduling, and performance management of culinary staff
Collaborate with other departments to ensure smooth coordination for events, banquets, and special functions
Attend and actively participate in training sessions, meetings, and special events as required
Requirements:
Must possess legal work authorization in United States (unless candidate is currently in a managerial position at another Four Seasons location as they may qualify for L-1 Visa sponsorship)
Required by Hawaii State Department of Health to obtain Tuberculous (TB) clearance card
Ability to stand for extended periods, lift up to 50 lbs, and push/pull as needed during shifts
Weekend and Holiday availability required
Advanced culinary and leadership experience is required
