Job Responsibility:
Train, supervise, and work with all chefs' staff to prepare, cook, create, and present food according to hotel standard recipes for quality food products
Assign specific duties to all kitchen associates for efficient operation
Select, train, and supervise kitchen staff in proper menu item preparation
Schedule culinary staff ensuring proper coverage and payroll cost management
Ensure proper ordering, receiving, storage, usage, and rotation of food products in compliance with Health Department regulations
Adhere to control procedures for cost and quality
Supervise daily safety and sanitation practices
Maintain vacation schedule for adequate staffing
Assist engineering with equipment repair controls and preventative maintenance programs
Develop and execute special events, VIP parties, and staff events
Prepare all food items according to recipe specifications
Perform other duties as assigned
Requirements:
High school education preferred
Managerial and production experience in similar hotel or resort required
3-5 years experience managing high volume food production environments
Ability to read, write, and speak English
Finger/hand dexterity to operate food machinery
Ability to lift and carry goods up to 200 lbs on a continuous schedule
Knowledge of food and labor cost controls
Basic computer knowledge preferred
Willingness to work flexible hours including weekends and holidays
Apprenticeship, post secondary school, or equivalent work experience beneficial
3-5 years in management of high volume production of hot and cold food, associate dining, upscale restaurants, and multiple outlet operations
Additional language skills and basic computer knowledge helpful
Thorough knowledge of food products, standard recipes, and proper preparation
