At Four Seasons Astir Palace Hotel Athens (ranked No. 17 in the World’s 50 Best Hotels), we are seeking a dedicated and highly skilled Sous Chef to join our Michelin-starred destination, Pelagos. This is a full-time, permanent leadership role for a culinary professional who excels in technical precision, operational excellence, and the elevated artistry of fine dining.
Job Responsibility:
To hire, train, motivate, supervise and discipline all Chef’s working directly and indirectly in the main kitchen
To communicate regularly with the Restaurant Chef to achieve an excellent rapport throughout the food production department and in developing new menu items as well the quality of all food prepared in the kitchen he supervises
Constantly inspect taste, temperature and visual appeal, make sure that all dishes are uniform and that established portion sizes are adhered to
To do requisition of all items needed for the following day from the food storeroom, non-food storeroom and stewarding department
To ensure that proper H.A.C.C.P. procedures, including records keeping, are followed and the outlet are always clean, neat and tidy
To ensure all equipment is in full working order
To ensure a superior production of international food and other dishes
To have full knowledge of Four Seasons Food Standards
Requirements:
A degree or diploma in Culinary Arts from an accredited institution is required
Previous experience in a similar role, preferably within the hospitality industry, is an advantage
Fluency in English is essential
Applicants must have European Passport or the legal right to work in Greece
