Coordinate the selection, training, development, and evaluation of employees in the Kitchens’ bake/pastry shop through effective management and leadership to ensure that established cultural and core standards are met
accommodating special requests whenever possible
Motivate, supervise and discipline all Chef’s working directly and indirectly in the Pastry kitchen, hotel personnel, in-house events, directions, etc.
Communicate regularly with the Pastry Chef to achieve an excellent rapport throughout the food production department and in developing new menu items as well the quality of all food prepared in the kitchen
Communicate with employees and managers to ensure operational needs are met as well as attend regular operational meetings to ensure effective coordination and cooperation between departments, service experience for all guests
Constantly inspect taste, temperature and visual appeal, make sure that all dishes are uniform and that established portion sizes are adhered to
Requirements:
Minimum 8 years experience in 5 star hotel
Excellent interpersonal skills and communication skills
Able to work in high stress environment, ability to remain cool under pressure
Enthusiastic about Pastry and Bakery
Knowledge in scratch cooking (very good knowledge of cakes and pastries, bakery, chocolate , buffet set up)
Good knowledge of sugar is a plus
Extensive culinary knowledge in both classical and current culinary trends
Extensive experience in management of foreign cooks (Multi National)
