Job Description

Join the vibrant pre-opening team at Four Seasons Resort and Residences Red Sea, a sanctuary of refined luxury, sustainability, and extraordinary dining. As Sous Chef – Garde Manger, you will lead the cold kitchen operations, overseeing salads, appetizers, charcuterie, cold sauces, and plated presentations across our culinary outlets. You will play a key role in setting culinary standards, inspiring your team, and delivering memorable dining experiences that reflect Four Seasons’ world-class hospitality and attention to detail.

Job Responsibility

  • Assist the Executive Chef and Chef de Cuisine in managing the daily operations of the Garde Manger section
  • Oversee preparation, presentation, and consistency of all cold kitchen dishes, ensuring alignment with Four Seasons’ quality and brand standards
  • Lead, train, and mentor a multicultural kitchen team, fostering growth, creativity, and collaboration
  • Ensure flawless mise en place, timing, and presentation for service across all outlets
  • Manage inventory, ordering, and cost controls to meet financial and sustainability goals
  • Ensure full compliance with food safety, hygiene, and sanitation regulations (HACCP)
  • Collaborate closely with hot kitchen and service teams to deliver seamless service

Requirements

  • Minimum 3–5 years of culinary experience in luxury hotels, fine dining, or high-volume operations
  • At least 1–2 years in a supervisory or Sous Chef role
  • Strong expertise in Garde Manger operations, including cold kitchen techniques, plating, and presentation
  • Solid knowledge of global cuisines, modern culinary trends, and menu development
  • Excellent leadership, communication, and organizational skills
  • Experience in large-scale or pre-opening operations is an advantage
  • Food Safety and HACCP certification preferred
  • Flexibility to work rotating shifts, weekends, and public holidays
  • Fluency in English is required
  • Candidates must be eligible to work in Saudi Arabia
