Marmelo is a restaurant and bar inspired by the coastal cuisine of Portugal and Spain with a focus on fresh and seasonal ingredients. Appointed by Gourmet Traveller as the Victorian Restaurant of the Year 2025, Marmelo celebrates a unique culinary style where wood and charcoal cooking methods impart incredible flavours bringing authenticity to the cooking process. Marmelo is located within Hyde Melbourne Place and operated by multi award-winning, restaurateurs – Ross & Sunny Lusted.
Job Responsibility:
Support the Head Sommelier to manage Marmelo’s wine list, including sourcing, ordering and inventory management
Recommend and pair wines with menu items to enhance the guest experience
Deliver engaging wine service and education to guests and staff
Maintain and oversee wine storage and quality control
Stay up-to-date with industry trends, vintages and new wine releases
Assist in staff training on wine knowledge and service standards
Requirements:
Proven experience as a Sommelier in a fine-dining environment
Deep knowledge of wines, regions, and vintages
Strong communication and guest service skills
Ability to manage inventory and supplier relationships
WSET Certificate is highly desirable
