As Sommelier, you will curate exceptional wine experiences and elevate the dining journey for our guests, managing the wine programme while guiding guests through thoughtfully selected wines with confidence and expertise. With a strong commercial mindset and a passion for sharing knowledge, you will ensure the highest standards of service, presentation and cellar management are consistently upheld within a luxury hospitality environment.
Job Responsibility
Provide expert wine service, including presenting, opening and serving wines and champagnes
Advise guests on wine selections, offering pairings that complement menu items and enhance the dining experience
Maintain and update the wine list, ensuring accuracy, variety and alignment with the concept
Manage wine inventory, including cellar organisation, stock levels and replenishment
Monitor quality and storage standards, including BIN number checks and vintage accuracy
Develop relationships with suppliers and attend tastings to source new wines and products
Design and implement wine promotions and initiatives to enhance guest engagement and revenue
Train and educate service teams on wine knowledge, service standards and pairing techniques
Conduct internal wine tastings to support team development
Ensure accurate record-keeping, including spill sheets and inventory logs
Maintain cleanliness, organisation and security of all wine storage and service areas
Ensure compliance with all licensing regulations and responsible service of alcohol
Support the wider Food & Beverage team in delivering exceptional service standards
Requirements
Proven experience as a Sommelier or in a wine-focused role, ideally within a luxury hotel or fine dining environment
Strong knowledge of wines, regions, vintages and pairing principles
Ideally hold a recognised wine qualification (such as WSET or equivalent)
Excellent understanding of restaurant service standards and guest experience
Exceptional attention to detail with a commitment to quality and presentation
Ability to work efficiently in a fast-paced, high-standards environment
Strong organisational skills, particularly in inventory and cellar management
Excellent communication and interpersonal skills, with the confidence to engage and guide guests
A passion for continuous learning and professional development within wine and beverage
A proactive mindset, anticipating guest needs and driving revenue opportunities
