Senior Sous Chef for the Chinese Kitchen at Four Seasons Hotel Bangkok at Chao Phraya River, responsible for managing the kitchen brigade, ensuring quality and hygiene standards, developing menus, controlling costs, and leading the team.
Job Responsibility:
Manage and supervise the Chinese kitchen brigade
Form a strong team spirit and foster excellent inter departmental cooperation
Promote career development of team members through training, feedback, coaching, and disciplining
Lead Training activities in the Food Preparation Department
Drive quality standards for all food prepared in the Chinese restaurant and banquet kitchen
Comply with HACCP procedures and ensure highest level of hygiene and sanitation
Assist in the development of creative menus and implementation of food promotions
Practice and demonstrate excellent technical kitchen skills
Lead in the execution of special culinary events
Supervise all employees during setup, service, and breakdown for each meal period
Verify taste and presentation of food prior to meal periods
Communicate and delegate the daily production schedule
Expedite orders on the line
Inspect and supervise sanitation and maintenance of equipment
Ensure proper work orders are made to repair kitchen equipment
Control labor and food costs
Ensure ongoing training of all employees
Maintain discipline and motivation for employees
Perform daily storeroom inspections
Review quality of goods received
Review refrigeration areas
Inform Executive Sous chef and Chinese restaurant chef of problems and irregularities
Ensure kitchen employees are storing foods properly
Monitor and control labor utilization
Monitor and control food cost
Assist in developing a safe and clean working environment
Participate in scheduling and performance evaluation of kitchen employees
Attend all required internal weekly meetings
Requirements:
Firm knowledge of Cantonese and English language
Ideally have a culinary diploma/degree
Minimum of three or four years’ experience working in an upscale Chinese/Cantonese restaurant in the same position
Must have the right to work in Thailand
Great culinary skills in Cantonese cuisine
Good business acumen
