Job Responsibility

  • Mentor entry-level cooks and culinary apprentices
  • oversee daily prep and production
  • Execute back-of-house (BOH) operations following F&B procedures, health codes, and federal guidelines
  • Ensure proper food handling, storage, and sanitation at all times
  • Help maintain food cost and labor cost targets
  • Check ingredient freshness
  • uphold recipe standards and portion-use records
  • Positively influence guest feedback through consistent food quality
  • Foster a respectful, cooperative team culture

Requirements

  • Hands-on experience with commercial kitchen equipment
  • Proficiency in sautéing, broiling, frying, roasting, butchery, garde manger, pantry, and breakfast cookery
  • Culinary degree or apprenticeship preferred — not required
  • Ability to stand and work at a fast pace for extended periods

  • Serves meals or prepares for delivery by using correct portioning, meeting outlined standards, ensuring that food is at the correct temperature, and is attractive and tasty
  • Responsible for the preparation of menu items as assigned by the Sous and Executive Chef(s)
  • Able to meet established food preparation times during busy meal periods
  • Cleans kitchen after preparation and serving, maintaining high standards of cleanliness and sanitation
  • Stores or discards excess food in accordance with safe food-handling procedures
  • Keeps refrigerators and storerooms clean and neat. Ensures food is stored per standards
  • Operates and maintains kitchen equipment as instructed
  • Attends in-service and department staff meetings
  • Maintains an excellent and professional working relationship with supervisor(s), fellow employees, CEO, Management Team, residents, guests, and vendors
