The Sanitation Manager is responsible for planning, directing, and overseeing all sanitation activities within a fresh seafood processing facility. This role ensures compliance with FDA and USDA regulations, HACCP, GMPs, SSOPs, and applicable third-party food safety standards. The Sanitation Manager leads sanitation teams, manages sanitation programs and documentation, and collaborates cross-functionally with Quality, Maintenance, and Production teams to maintain a hygienic, well-maintained, and audit-ready processing environment. This position also oversees facility cleanliness, upkeep, and overall appearance to ensure the site remains inspection- and visitor-ready at all times.
Job Responsibility
Develop, implement, and maintain SSOPs and Master Sanitation Schedules for all equipment, processing areas, and facility infrastructure
Unify sanitation methods, materials, and procedures between plants
Ensure sanitation programs meet or exceed FDA, USDA, HACCP, customer, and third‑party audit requirements
Verify sanitation effectiveness through inspections, checklists, and visual verification
Lead, train, and supervise sanitation supervisors, leads, and technicians
Train teams on safe cleaning practices, chemical handling, lock‑out/tag‑out, PPE usage, and food safety protocols
Promote a strong food safety and safety culture across all shifts, including overnight sanitation
Partner with Quality Assurance team on audits, investigations, corrective actions, and continuous improvement
Coordinate with Maintenance and Production to support sanitary design, effective cleanouts, and minimized downtime
Investigate sanitation‑related issues that could impact product safety, shelf life, or customer compliance
Stay up-to-date on latest sanitation technologies and materials and make recommendations for improvements
Own overall facility condition and appearance in coordination with Maintenance, ensuring the site remains audit ready and customer visit ready at all times
Manage and coordinate third party service providers performing facility repairs and upkeep
Identify facility deficiencies that could impact sanitation, food safety, GMPs, or audit outcomes and drive timely corrective actions
Ensure contracted work complies with food safety, sanitation, and GMP requirements
Partner with Maintenance and Operations to schedule repairs and facility improvements with minimal disruption
Maintain basic records of contractor work, scope, and completion
Maintain complete and accurate sanitation records for regulatory inspections, audits, and internal reviews
Support FDA, customer, and third‑party audits (SQF, BAP, etc.) and ensure timely closure of findings
Track sanitation KPIs and report performance against food safety objectives
Manage sanitation chemical programs, inventories, and supplier relationships
Ensure proper chemical labeling, storage, MSDS availability, and safe use
Control sanitation labor, overtime, and supply costs while maintaining compliance
Requirements
5+ years of sanitation experience in a food manufacturing or seafood processing environment
3+ years of experience in a sanitation supervisory or management role
Strong knowledge of GMPs, SSOPs, HACCP, FDA, and USDA regulations
Experience leading sanitation teams within fresh protein processing environments
Excellent documentation, training, and communication skills
Intermediate proficiency in Microsoft Excel
Proven ability to collaborate effectively across departments
Professional communication skills with the ability to interact confidently with auditors, customers, and key stakeholders
Strong problem-solving abilities with a proactive, solutions-oriented approach
Seafood HACCP certification
Experience supporting SQF, BAP, FDA, USDA, and customer audits
Degree in Food Science, Supply Chain, Business, or a related field, or an equivalent combination of education and experience
Nice to have
Experience coordinating facility maintenance, repairs, and/or external contractors in a food manufacturing or processing setting
