We’re looking for an experienced Restaurant Manager to lead day-to-day floor operations and service delivery across Rotunda, Green & Fortune’s flagship restaurant, featuring live-fire cooking, an open-plan kitchen, a private dining room and intimate canal views. This is a hands-on leadership role for someone who thrives on the floor, enjoys building strong teams, and is passionate about delivering consistently high guest experiences. This role is suited to an experienced Restaurant Manager or a high-performing Assistant Manager from a high-volume, high-profile venue. This role is based at the company’s head office site, working closely with the senior leadership team.
Job Responsibility
Lead full restaurant service cycle from pre-service to close-down
be visible floor leader ensuring smooth service and guest flow
maintain high standards of presentation and organisation across FOH areas
review bookings, VIP notes and running orders
lead, motivate and develop restaurant team
support recruitment, onboarding and training of FOH staff
deliver pre-shift briefings and on-the-floor coaching
plan rotas and resourcing
plan labour in line with budgets and trading patterns
monitor stock, consumables, wastage and shortages
oversee stock takes and report variances
maintain accurate menus, pricing and presentation
work closely with kitchen, bar, events, café and management teams
represent restaurant operation in cross-department planning
review pre- and post-service feedback
act as key point of contact for guest feedback and service recovery
Requirements
Experience as Restaurant Manager or high-performing Assistant Manager
ability to lead day-to-day floor operations
experience in high-volume, high-profile venue
strong team building skills
