Product Developer

• Drive end-to-end product development from early concept and prototyping to pilot, scale-up and commercial launch
• Develop both short-term product improvements and long-term innovation pipelines aligned with MATR’s strategy
• Formulate fermented, plant-based products with a strong focus on taste, texture, nutrition, functionality and cost. Working hands on with ingredients to create substrates and marinades
• Plan and execute lab trials, pilot runs and production trials in collaboration with manufacturing and external partners
• Own product documentation including formulations, specifications, test results and learnings as well as preparing lab reports for patent applications
• Work closely with Quality, Operations, Commercial and Marketing to ensure products are scalable, compliant and market-ready
• Support sensory testing, internal tastings and customer demonstrations
• Continuously improve existing products based on data, feedback and performance in market
• Stay close to food tech, fermentation and plant-based trends and translate insights into actionable product ideas

• Background in food science, food technology, biotechnology or gastronomy with fermentation experience
• Experience with product development in food or beverage – ideally within startups, scaleups or food tech environments
• Fermentation experience (ideally solid) is a requirement
• Hands-on experience with formulation, trials and scale-up, with a solid understanding of Design of Experiments
• Solid understanding of NPD processes, from concept development to commercialization
• Comfort working in a fast-moving, sometimes ambiguous environment where priorities evolve
• Strong analytical and documentation skills – you like turning experiments into learning
• Collaborative mindset and ability to work cross-functionally while also being a self-starter who can drive projects forward
• Fluent in English
