The Premium Manager is responsible for supervising food and beverage service to ensure consistency and in turn provide exceptional guest experiences.
Job Responsibility:
Oversee daily restaurant, bar, and café operations, including guest flow, staff assignments, side work, inventory, cash handling, POS reporting, and closing procedures
Manage the reservations system and host team while coordinating closely with kitchen, service staff, and management to ensure seamless service execution
Supervise, schedule, and evaluate dining room staff
conduct pre-shift meetings
provide coaching, enforce policies, and address performance or disciplinary matters
Deliver exceptional guest experiences by proactively engaging guests, advising on menus, wine and beverage pairings, handling special occasion arrangements, and resolving concerns or complaints promptly
Maintain strong client relations by anticipating guest needs, ensuring service quality meets Legends standards, and investigating food or service issues as needed
Ensure dining, serving, and public areas are clean, properly set, and compliant with health, safety, and appearance standards, including uniforms and overall restaurant image
Order and manage supplies and equipment for tables and service stations to support efficient operations
Complete financial, reporting, and HR/payroll administrative duties accurately and in accordance with company policies
Foster a safe, positive, and collaborative work environment
ensure compliance with safety standards and complete accident reports when required
Requirements:
Bachelor's degree with a minimum of 3 years of experience in a fine dining and casual restaurant environment
Knowledge of fine wines and beverage programs required
Must possess a strong knowledge of food and beverage procedures, controls and administration as well as complete awareness and ability to perform all foodservice functions
Must have excellent written and verbal communication skills and the ability to multi-task and prioritize in a deadline-oriented environment
Customer service oriented with the ability to communicate with employees, vendors, client representatives and guests in a positive and professional manner
Must be flexible to work extended hours due to business requirements including late nights, weekends and holidays
Must be able to work in a team environment
Knowledge of accounting policy and procedures and POS Systems is preferred
Proficiency with technology, including Microsoft Word, Excel, and PowerPoint
A genuine interest and understanding in food and drink – wine and cocktail knowledge is essential
Must have excellent knowledge of food and beverage preparations, service standards, guest relations and etiquette
Knowledge of the appropriate table settings and service ware
Current Food Protection Certification
