Maison Estelle is a private members’ club set in a Grade I-listed Georgian townhouse on Grafton Street, Mayfair. A ‘hosted home’, bringing people together that have plenty to say and nothing to prove. A new school club (no rules), with old school values of personalised service and discretion. We are looking for an enthusiastic Demi Chef de Partie to join our Culinary team based in our kitchen focused around Italian cuisine, The Attic Osteria. This role will focus on Pizza making, but ultimately will assist in all areas of the kitchen. The on target earning potential for this role is £41,700 per annum based on a 45 hour contract - comprising a base salary of £30,400 plus a qualified estimate of £11,300 in gratuities and service charge*. Please note this role is paid hourly so this is a projected salary and OTE.
Job Responsibility:
Delivering a fresh, high quality food offer for our members club
As a Demi Chef de Partie you will work and assist across all food sections in the kitchen, as required
Ensuring the highest possible standard of presentation & cleanliness in all areas of the kitchen (both in the kitchen itself and & back of house areas)
Maintaining a clean and orderly cooking station
Showing full support to senior staff, the goals and ideals of the operation, working continually towards the betterment of our member’s expectations
Controlling the wastage and the costs of their section, and meeting budget specifications
Storing of food and provisions including raw material quality checks
Allocating duties to commis chefs where necessary
Supporting and participating in activities, which may serve to improve our operations or the efficiency of the business
Keeping all H&S and Food safety documentation and reporting up to date including – temperature records, retained & cooked, food logs, delivery standards and probe calibrations
Ensuring that the kitchen, stock rooms are cleaned to a high standard
Assisting the BOH Manager in ensuring the kitchen equipment is properly maintained and report any faults with equipment to him
Preparing and assisting with regular stock takes
Ensuring that, in general, all stock is secure and there is no stock loss from the Kitchen.
Requirements:
Proven experience working in the Kitchen departments in a luxury / lifestyle multi-outlet food and beverage operation
Passion and previous experience for Italian food, including but not exclusive to Pizza
Stays up to date with current food trends and best practices
Must be able to work flexibly including evenings and weekends due to the operational hours of the club
Excellent communication skills and comfortable talking to colleagues, senior management and coming front of house to talk to members
A genuine passion for hospitality and hosting.
