The Pastry Sous Chef is responsible for supporting the Executive Pastry Chef in planning, organizing, controlling and directing the work of pastry employees ensuring superior quality and consistency.
Job Responsibility:
Support the Executive Pastry Chef in planning, organizing, controlling and directing the work of pastry employees ensuring superior quality and consistency
Support the Executive Pastry Chef in coordinating the selection, training, development, and evaluation of employees in the Pastry Department
Assist with long-range strategic planning for outlet operation
Assist in the planning and development of recipes
Ensure the correct preparation and presentation of a consistent level for all food items prepared through production and demonstration
Support the Executive Pastry Chef in controlling labor and operating expenses through effective scheduling, budgeting, purchasing decisions, and inventory control
Ensure that sanitation standards as set forth by Four Seasons, local, state, and federal regulations are in compliance
Ensure the cleanliness and organization of the kitchen
Maintain control systems which will assure quality and portion consistency
Monitor food shipments to ensure they meet established purchasing specifications
Foster an awareness of the importance of food preparation and quality
Communicate with employees and managers to ensure operational needs are met
Attend regular operational meetings to ensure effective coordination and cooperation between departments
Requirements:
Solid knowledge of pastry
A passion to develop leadership skills within the hotel industry
Creativity and flair
Coaching skills
Proved evidence of good business acumen
Strong work ethic
Ability to operate and utilize culinary production equipment and tools
Working advanced culinary and division operations knowledge
Ability to operate computer equipment and other food & beverage computer systems
Reading, writing and oral proficiency in Italian
Fluency in English would be a plus
