Job Description:

As Pastry Chef de Partie, you will play a key role within our Pastry team, overseeing daily production of chocolate and pastry items with an emphasis on precision, creativity, and presentation. You’ll ensure that every confection reflects the artistry and excellence synonymous with Four Seasons, inspiring your team to deliver desserts that are as visually stunning as they are delicious.

Job Responsibility:

  • Supervise and actively participate in the preparation of all chocolate, confectionery, and pastry items for restaurants, banquets, and retail
  • Maintain the highest standards of product quality, taste, and presentation in line with Four Seasons brand standards
  • Oversee daily production schedules, ensuring timely and consistent output while minimizing waste
  • Train, mentor, and support pastry and chocolate team members in techniques such as tempering, molding, filling, glazing, and decorating
  • Collaborate closely with the Pastry Chef on seasonal menu development and creative chocolate displays
  • Monitor inventory levels, order ingredients, and ensure proper storage and handling of chocolate and pastry components
  • Maintain strict adherence to food safety, hygiene, and sanitation standards (HACCP)
  • Ensure equipment and tools are properly maintained and in safe working condition
  • Foster a positive and respectful work environment, embodying the Golden Rule culture of treating others as you wish to be treated

Requirements:

  • Proficiency in written and spoken English and Spanish
  • Minimum 3 years’ experience in fine-dining pastry or luxury hotel chocolate production
  • Proven technical expertise in chocolate tempering, confectionery, and advanced pastry techniques
  • Strong leadership and communication skills with the ability to train and motivate a diverse team
