Job Responsibility

  • Directs and oversees the activities of cooks during a specific shift while ensuring job expectations are completed and proper policy and procedure is maintained
  • Prepares food in accordance with applicable federal, state and corporate standards, guidelines and regulations with established policies and procedures
  • Ensures quality food service is provided at all times
  • Prepares and serves high-quality food items according to standardized recipes and dietary needs
  • Follows daily production sheets using outlined standards, proper portioning and correct temperature
  • Tastes all prepared food items to confirm correct flavoring and ensures attractive presentation
  • Serves meals or prepares for delivery by using correct portioning, meeting outlined standards, ensuring that food is at the correct temperature and is attractive and tasty
  • Cleans kitchen after preparation and serving, maintaining high standards of cleanliness
  • Stores or discards excess food in accordance with safe food-handling procedures
  • Keeps refrigerators, freezers and storerooms clean and neat
  • Ensures food and supply items are stored and labeled per standards
  • Operates and maintains kitchen equipment as instructed
  • Assists in production planning, record keeping and reporting as required
  • Assists in the ordering and receiving of all food and supplies as required
  • Labels, dates and properly store all food items
  • Reports needed maintenance, faulty equipment or accidents to the supervisor immediately
  • Attends in-service and safety meetings
  • Follows HACCP (Hazard Analysis and Critical Control Points) to ensure quality and safety of food supply
  • Complies with federal, state and local health and sanitation regulations and department sanitation procedures
  • Complies with all state and county health codes for food handling
  • Maintains good working relationships with coworkers, residents and guests
  • Performs job safely while maintaining a clean, safe work environment
  • Assists chefs in maintaining accurate daily production records and completes all required documentation, reports, and logs as assigned
  • Assists in the cross training of employees
  • Supervises the kitchen in the absence of the Executive or Sous Chef(s)
  • Opens or closes the kitchen according to schedule
  • Supervision of cooks and kitchen stewards

Requirements

  • High school diploma or equivalent
  • Prior commercial kitchen experience required
  • Able to complete ServSafe Certification
  • Must have Food Handlers Certificate
  • Possess current or has the ability to obtain a Level 1 Fingerprint Clearance Card is required
