This position will help co-lead the kitchen team in delivering exceptional dishes.
Job Responsibility:
Support the Sous Chef in overseeing daily kitchen operations to ensure smooth, efficient service across all outlets and banquets
Supervise, train, and guide a large and diverse kitchen team, fostering teamwork, consistency, and a culture of excellence
Ensure high standards of food preparation, production, plating, and presentation for hot and cold dishes
Uphold rigorous food safety, allergen management, hygiene, and cleanliness standards in line with hotel policies
Maintain a clean, organised, and efficient kitchen section during all service periods
Collaborate closely with culinary, events, and cross-functional teams to deliver seamless guest experiences
Assist with inventory control, mise en place, and cost management while supporting high-volume production
Participate in department meetings and team briefings, clearly communicating goals and contributing to positive outcomes
Support the development and implementation of new menus, concepts, and promotional initiatives
Lead by example, consistently striving to exceed guest expectations through quality, precision, and professionalism
Requirements:
Holds Certificate III or IV in Hospitality, or equivalent Commercial Cookery Qualification
Full-time availability across shifts, including weekends and public holidays
Over 6 years of post-apprenticeship experience in hospitality, with relevant experience in similar roles
Proven experience managing teams, highly regarded in leadership roles
Prior experience working in luxury 5-star hotels or high-end venue operations
Skilled in open fire cooking techniques with deep technical knowledge and creativity
Strong food safety knowledge and commitment to compliance
Excellent organizational skills, calm under pressure, and hands-on approach to service
Self-motivated, driven, and energized to perform in fast-paced environments
Enthusiastic about career advancement and continuous professional growth
Solutions-oriented with a positive, can-do attitude
