Job Description:

At The Ritz-Carlton, Melbourne, culinary presentations are a statement of craftsmanship. We are seeking an experienced and passionate Junior Sous Chef (Atria Signature Restaurant) to help co-lead our kitchen team in delivering exceptional dishes for fine dining on a Full-Time basis.

Job Responsibility:

Support the Atria Sous Chef in overseeing the kitchen's daily operations
Manage, train and guide a large and diverse team, fostering a culture of excellence and collaboration
Uphold rigorous food safety, allergen management, and hygiene standards
Collaborate cross-functionally with culinary teams to deliver flawless guest experiences
Maintain inventory, support cost control and manage high production volumes
Participate in department meetings and continually communicate a clear and consistent message regarding the departmental goals to produce desired results
Support and assist with new menus, concepts and promotions for the Restaurant outlets

Requirements:

Certificate III or IV in Hospitality
Availability to work full-time, across shifts including weekends and public holidays
A confident and capable individual with at least 6 years of post apprentice experience
Experience with managing a team - highly regarded
Prior experience in a luxury 5-star hotel or high-end venue operations
Experience in working with open fire cooking
Deep technical knowledge and creativity
Food Safety Knowledge
Strong organizational skills, calm under pressure, with a hands-on approach to service
A natural trainer and mentor who brings out the best in others
