The Junior Sous Chef - Pastry supports the Executive Pastry Chef and Sous Chef in overseeing the daily operations of the pastry kitchen. This role is responsible for ensuring the consistent preparation and presentation of high-quality desserts, pastries, and baked goods in accordance with the hotel's luxury standards. The position combines hands-on production with team supervision, maintaining exceptional hygiene, efficiency, and guest satisfaction.
Job Responsibility:
Assist in managing daily pastry kitchen operations, including production, preparation, and service
Supervise and guide pastry team members to ensure consistency, quality, and adherence to recipes and presentation standards
Prepare and present a variety of pastries, desserts, baked goods, and specialty items for restaurants, banquets, and events
Monitor food quality, taste, portioning, and visual appeal to meet luxury hospitality standards
Ensure compliance with food safety, sanitation, and hygiene regulations (e.g., HACCP standards)
Support inventory control, ordering, and proper storage of ingredients and supplies
Minimize food waste and control costs through efficient production planning
Assist in menu development, seasonal offerings, and creative pastry concepts
Coordinate with other kitchen and service teams to ensure timely and smooth service delivery
Train, mentor, and evaluate junior pastry staff to enhance performance and skill development
Maintain a clean, organized, and safe working environment at all times
Requirements:
Diploma or degree in Culinary Arts, Pastry Arts, or a related field preferred
Minimum 2–4 years of supervisory experience, ideally within luxury hotels, fine dining, or high-volume operations
Proven experience in pastry production, including baking, desserts, chocolate work, and plating techniques
Strong knowledge of food safety, hygiene, and kitchen operations
Leadership ability with experience supervising or training junior staff
Creativity and attention to detail in pastry presentation and flavor development
Ability to work in a fast-paced, high-pressure environment while maintaining quality standards
Strong communication and teamwork skills
Flexibility to work rotating shifts, weekends, and public holidays as required by hotel operations
Must be able to speak, read, and write Bahasa Malaysia and English
Must have the right to work in Malaysia
