We are seeking a visionary and accomplished Head Pastry Chef to lead and inspire our culinary team, shaping the next chapter of pastry excellence at Estelle Manor. You will lead the evolution of our entire pastry and bakery offering, shaping a department that sits at the very heart of the Manor’s culinary identity. Reporting directly into senior leadership and commanding a talented team of eight, you will be the driving force behind every element of pastry production across the estate, from artisanal breads and viennoiserie to refined plated desserts and bespoke chocolate work.
Job Responsibility:
Lead the evolution of our entire pastry and bakery offering
Oversee all pastry operations for the hotel
Deliver exceptional standards across four distinct restaurant concepts (Japanese, Chinese, Glasshouse and Brasserie), breakfast service and estate wide production
Hold ultimate responsibility for quality, food standards, financial performance and health and safety within the pastry kitchen
Lead and inspire the culinary team
Requirements:
A visionary, organised and driven leader, ready to elevate and refine our pastry offering
An experienced hotel based Head Pastry Chef with strong expertise across both bakery and patisserie
A confident team leader, inspiring and developing a team of eight while setting clear standards of excellence
Commercially aware and operationally strong, with experience managing budgets, compliance and health and safety
A creative yet disciplined all rounder, capable of delivering high level production alongside refined, restaurant ready desserts
An excellent communicator who builds strong relationships across a diverse estate
Positive, solution focused and charismatic, leading from the front with energy and professionalism
