Farmer J is a London-based, premium fast casual brand known for bold, ingredient-driven food rooted in Mediterranean and Middle Eastern flavours. Following significant investment and rapid growth in the UK, the company has launched its first U.S. location in New York City, with plans to expand to 20+ locations over the coming years. We are looking for a US Head of Food to build, implement, and uphold the culinary operating model in the United States. This role will be responsible for ensuring consistent, high-quality food execution at scale, while building the systems and infrastructure required for growth. This is a hands-on culinary leadership role balancing execution and strategy.
Job Responsibility
Owning food quality standards and ensuring they are consistently upheld in the kitchen
Translating the UK menu into the U.S. market
Partnering with the UK team to translate and adapt the menu for the U.S. market
Develop select U.S.-specific dishes using seasonal and local ingredients
Lead seasonal menu launches, including testing, validation, and rollout
Ensure recipe accuracy across yields, portioning, and inventory systems
Build and implement culinary systems to support consistent execution across locations
Develop SOPs, product specifications, and training materials (e.g., How-To-Cards)
Design and operationalise a commissary-based production strategy from the first NYC location, defining centralised vs. in-store production
Drive accountability across teams for maintaining standards
Establish and enforce food safety standards, labelling, and compliance
Build and manage supplier relationships to ensure quality and consistency
Partner with suppliers on product development and outsourced manufacturing
Recruit, train, and develop high-performing kitchen teams
Lead pre-opening culinary training and support new site launches
Build and deliver ongoing training programs for menu and process changes
Support kitchen design for new locations to ensure operational efficiency
Requirements
10-15+ years in culinary leadership within high-volume or multi-unit environments
Proven experience building and implementing systems that support consistent execution
Experience translating recipes into repeatable, scalable production
Strong background in kitchen operations, training, and food quality management
Experience working with structured production environments (commissary or equivalent)
Familiarity with Mediterranean and/or Middle Eastern flavours
First-class communication skills that bring teams together
Excellent attention to detail
