Redcape Hospitality is looking for an experienced & passionate Head Chef to lead the kitchen at Brightwater Hotel — a landmark waterfront venue at the heart of a vibrant Sunshine Coast community. With a high-volume bistro and home to The Lakehouse Sunshine Coast, a premier function and wedding destination, this is a rare opportunity to take full ownership of a dynamic, large-scale operation.
Job Responsibility:
Lead and manage all kitchen operations across bistro and functions
Drive consistency, quality, and presentation of all food offerings
Develop, coach, and inspire a high-performing kitchen team
Manage stock, ordering, and cost control to meet financial targets
Management of labour and cost of goods to meet financial targets
Oversee menu execution and contribute to menu development
Ensure compliance with food safety and WHS standards
Work collaboratively with the Venue Leadership Team to drive overall performance
Requirements:
Proven 3–5 years’ experience as a Head Chef in a high-volume venue
Strong leadership skills with the ability to build and develop high-performing teams
Experience managing large-scale service and events, including functions and weddings
Solid understanding of food cost control and kitchen financial management
Hands-on, solutions-focused approach to kitchen operations
Passion for delivering quality food and consistent service
