We are looking for a passionate and forward-thinking Head Chef to lead the launch of POCO, our new pizzeria and bar concept inspired by the creative energy of D4100 - the London based hospitality brand known for bringing people together through food, community and joyful experiences. POCO will be a lively, modern space serving exceptional pizza in a social, inclusive atmosphere. Expect collaborations with guest chefs and bartenders, live music nights, DJ sessions at the bar, partnerships with local coffee roasters, and signature community events such as singles-only nights or community dining experiences. poco is designed to be a place where Vienna meets, mingles, shares, discovers and always feels welcome at the table. You’ll bring this dynamic concept to life in the kitchen, championing POCO’s vibrant culinary spirit while also embodying Miiro’s thoughtfully personal approach to hospitality.
Job Responsibility:
Lead the full culinary pre-opening setup of poco in collaboration with the Cluster Food & Beverage Manager
Build and execute a culinary concept that reflects poco’s vibrant personality: handcrafted pizzas, creative small plates, and a breakfast experience
Design kitchen workflows, recipe structures, production systems and plating standards
Manage food cost, forecasting, ordering and inventory with accuracy and ownership
Maintain strong daily/weekly/monthly stock controls with a focus on reducing waste and optimising productivity
Lead and motivate from the front, shaping a kitchen culture that mirrors poco’s spirit
Recruit, train and mentor your culinary team
Ensure the kitchen is a wonderful place to work: support staff well-being, development and morale
Maintain full compliance with HACCP, hygiene and safety standards
Collaborate closely with the Restaurant Manager and Front of House teams
Engage with local producers, bakers and culinary partners to build authentic relationships
Work with Marketing and Events teams to activate poco through guest-chef collaborations, pop-ups, community dinners, live music, DJ sets and neighbourhood partnerships
Embrace the fast-paced, ever-changing nature of hospitality with positivity, openness and curiosity
Requirements:
Strong knowledge of pizza culture, dough preparation, Mediterranean flavours and modern casual dining trends
Several years of experience in related field required
Experience in breakfast operations, ideally within hotels or high-volume venues
A calm, solutions-oriented approach
A hands-on leader who trains by example and builds an inclusive, supportive team environment
Flexible, adaptable and energised by launching a new concept from the ground up
Fluent in German and English
Nice to have:
Experience with new openings or concept development is a plus
