A rare opportunity to lead a high-performing kitchen within one of Merivale’s busiest venues, working closely with Exec Chef Dan Hong. The venue is a Sydney institution known for style, energy and consistency, blending traditional Thai with Aussie pub classics.

Job Responsibility

  • Lead, develop and inspire a team of 15+ chefs
  • Own menu creation and evolve a diverse, high-volume offering (Thai + pub classics)
  • Drive consistency, speed and quality across all service periods
  • Partner with senior stakeholders on food direction and performance
  • Be hands-on in service while leading from the front
  • Manage financial performance — food cost, labour and forecasting
  • Build a strong, engaged and high-performing kitchen culture

Requirements

  • Proven Head Chef with 3+ years experience
  • Experience in fast-paced, high-volume environments
  • Confident operating at a senior level while staying close to the pass
