Job Description:

We’re looking for an experienced and commercially focused Head Chef to lead the kitchen in one of Green & Fortune’s flagship venues on London’s Southbank. This is a senior leadership role responsible for driving culinary performance across restaurant dining, corporate hospitality, and events.

Job Responsibility:

  • Lead the day-to-day kitchen operation
  • Maintain high standards of food quality, presentation, and service readiness
  • Oversee kitchen organisation, equipment, food production areas, and storage spaces
  • Drive menu development and recipe standardisation
  • Lead, motivate, and develop the kitchen team
  • Manage recruitment, onboarding, training, and succession planning
  • Oversee labour planning, rotas, and holiday management
  • Deliver structured performance reviews, coaching, and skills development
  • Manage food cost, labour, purchasing, and stock control
  • Monitor kitchen performance through regular reviews of GP, stock results, and operational trends
  • Implement effective waste management, portion control, and stock rotation processes
  • Work with senior management to support menu engineering, product innovation, and revenue growth
  • Work closely with the General Manager and wider leadership team
  • Lead kitchen briefings and contribute to weekly management and operational meetings
  • Monitor guest feedback and operational reporting
  • Maintain full compliance with food safety, health & safety, and company operational standards
