The Assistant Food & Beverage Manager supports the daily operations of all food and beverage outlets within Gatlinburg SkyPark. This leadership role assists with staff supervision, guest service execution, food safety compliance, inventory management, labor control, and operational standards to ensure an exceptional guest experience in a high-volume tourism environment. The ideal candidate is energetic, guest-focused, operationally organized, and capable of leading by example in a fast-paced hospitality setting.
Job Responsibility
Assist in overseeing daily operations of all food and beverage venues
Ensure exceptional guest service standards are consistently maintained
Resolve guest concerns and service recovery situations professionally and efficiently
Maintain cleanliness, organization, and presentation standards throughout all locations
Support opening, mid-shift, and closing operational procedures
Monitor food quality, portion consistency, and ticket times
Supervise and support hourly team members, shift leaders, and supervisors
Assist with hiring, onboarding, and training new employees
Provide coaching, accountability, and performance feedback to staff
Help foster a positive, team-oriented work culture
Lead by example through professionalism, urgency, and strong work ethic
Ensure compliance with all local health department regulations and company sanitation standards
Enforce proper food handling, handwashing, temperature logs, and cleaning procedures
Conduct routine line checks and operational inspections
Maintain a safe working environment for employees and guests
Assist with inventory counts, ordering, and product rotation
Monitor waste, spoilage, and food cost controls
Support labor management through effective scheduling and shift adjustments
Ensure accurate cash handling and POS procedures are followed
Support efforts to meet daily sales and revenue goals
Complete operational reports, shift documentation, and incident reports as needed
Assist with scheduling and labor planning
Support implementation of promotions, seasonal menus, and special events
Communicate effectively with upper management and other departments
Requirements
Minimum 2 years of food & beverage supervisory or management experience preferred
High-volume restaurants, bars, attractions, or tourism experience strongly preferred
Strong leadership and communication skills
Ability to multitask and remain composed under pressure
Knowledge of food safety and sanitation standards
Experience with POS systems and inventory management preferred
ServSafe Manager Certification required
Tennessee ABC Server Permit Required
