This position will oversee inmate workers and staff in the preparation and processing of food, and the maintenance, safety, and sanitation of the food service, and teach inmates job skills to help prepare them for re-entry into the community.
Job Responsibility:
Train and supervise a staff of Food Service Specialists to assure large-scale food production on a given shift
Schedule food service staff, supervise, and direct the work of subordinate staff
Assure compliance with food safety and sanitation regulations
Assist with menu and recipe development
provide nutritious menus, diabetic diets, and other medical and religious diets as required
Analyze recipes/menus to meet the USDA guidelines for nutrition
Develop and maintain institutional food service policies and procedures
Responsible for overall maintenance, security, sanitation, and cleanliness of the facility
Responsible for safety and sanitation training of workers under their supervision and documentation of this training
Responsible for timekeeping and refrigeration logs, sanitation records, and production schedules
Requirements:
3-5 years of progressive work experience (typically in Food Services) with acquired knowledge at the level of a Food Services Specialist
OR Bachelor's Degree (typically in Culinary Arts) with 0-2 years of progressive work experience (typically in Food Services) with acquired knowledge at the level of a Food Services Specialist
Knowledge of supervisory methods
Knowledge of budget and procurement practices and policies
Physical ability to lift 50 lbs
Ability to remain on feet for long periods of time
Ability to walk on hard, uneven, and/or slippery surfaces
Ability to perform occasional bending, kneeling, squatting, stooping, stretching
Must pass background/reference check, medical evaluation, and drug screen prior to appointment
Must meet WDOC dress code policy standards for facial hair, body art, and piercings/gauges
