Requirements:
Ability to ensure correct handling and preparation of food items according to HACCP limits
Ability to collect samples for micro-testing
Ability to perform tasks as assigned by hotel management
Daily review of kitchens, expiry dates, storing and documenting food samples
Ensuring calibration of temperature measuring tools monthly
Conduct ATP swabs according to schedule
Daily tour all food holding facilities
Maintain all documentation in an organized manner
Ability to hold regular meetings with kitchen staff
Identify equipment risks and inform senior staff
Ability to verify compliance of engineering, maintenance and pest control documentation
Ability to complete performance evaluations for kitchen employees
Conduct checks on receiving, storage process
Ability to ensure sanitation standards comply
Ability to monitor cleanliness of food preparation equipment
Ability to develop a safe working environment
Work closely with Security on monthly reporting
