Job Description:

The role involves ensuring food safety compliance, maintaining hygiene standards, conducting audits and training, and implementing sustainability initiatives at Four Seasons Seychelles at Desroches Island.

Job Responsibility:

  • General verification aspects

  • Verification and monitoring of purchasing, receiving and storage system aspects

Requirements:

  • Ability to ensure correct handling and preparation of food items according to HACCP limits
  • Ability to collect samples for micro-testing
  • Ability to perform tasks as assigned by hotel management
  • Daily review of kitchens, expiry dates, storing and documenting food samples
  • Ensuring calibration of temperature measuring tools monthly
  • Conduct ATP swabs according to schedule
  • Daily tour all food holding facilities
  • Maintain all documentation in an organized manner
  • Ability to hold regular meetings with kitchen staff
  • Identify equipment risks and inform senior staff
  • Ability to verify compliance of engineering, maintenance and pest control documentation
  • Ability to complete performance evaluations for kitchen employees
  • Conduct checks on receiving, storage process
  • Ability to ensure sanitation standards comply
  • Ability to monitor cleanliness of food preparation equipment
  • Ability to develop a safe working environment
  • Work closely with Security on monthly reporting
  • Ability to respond properly in emergency situations
  • Ability to participate with Security department on emergency response
  • Assist in training presentations as a trainer
  • Implement new strategies regarding food safety
  • Organize necessary trainings for food handlers
  • Ensure measures are taken to maintain certification
  • Work on projects to improve sustainability
