A new luxury historic castle is opening in the Irish Midlands, and we are looking for an exceptional Food & Beverage Manager to help bring its dining vision to life from day one. This is not a traditional F&B role — it is something altogether more personal, more creative, and more ambitious. You will oversee the full food and beverage operation across all dining occasions — from a refined à la carte breakfast and a signature Afternoon Tea, through to lunch, dinner and intimate private dining experiences. Operating within a privately hosted model, you will lead a small, talented team to deliver service that feels deeply personal, unhurried and completely effortless.
Job Responsibility:
Lead all daily F&B operations across dining rooms, bar and drawing rooms with a visible, floor-first approach
Oversee all dining services — Breakfast, Afternoon Tea, Lunch and Dinner — to the highest possible standard
Be personally present during pre-dinner drinks, dinner service and key guest hosting moments
Align menus and service style with individual guest preferences and pre-arrival profiling
Manage atmosphere across all guest-facing spaces — lighting, fires, music and room transitions
Demonstrate deep knowledge and experience of wine and beverage service
Oversee cellar management, stock control and supplier relationships
Train and develop a small, cross-trained team in discreet, anticipatory, unscripted service
Coordinate bespoke private dining experiences and exclusive events
Ensure full compliance with food safety, licensing and health & safety requirements
Requirements:
2–3+ years of senior F&B leadership from a luxury hospitality environment
Strong grounding in fine dining or private dining at the highest level
Exceptional wine knowledge
Experience working within Forbes Travel Guide or LQA assessed properties is highly desirable
Background with Michelin-recognised operations is a significant advantage
Pre-opening experience and international luxury exposure will set you apart
