Job Description:

We are seeking a talented and inspiring Executive Sous Chef to support the leadership of our dynamic culinary team on a Full-time basis. This role is perfect for a hospitality professional who thrives in a world of refined service, creativity, and operational excellence. Your role will be to ensure that the “Gold Standards” of The Ritz-Carlton are delivered graciously and thoughtfully every day. Job Responsibility:

  • Provides direction for all day-to-day operations
  • Understands employee positions well enough to perform duties in employees' absence or determine appropriate replacement to fill gaps
  • Provides guidance and direction to subordinates, including setting performance standards and monitoring performance
  • Encourages and builds mutual trust, respect, and cooperation among team members
  • Supervises and coordinates activities of cooks and workers engaged in food preparation
  • Demonstrates new cooking techniques and equipment to staff
  • Develops and implements guidelines and control procedures for purchasing and receiving areas
  • Manages department controllable expenses including food cost, supplies, uniforms and equipment
  • Monitors the quality of raw and cooked food products to ensure that standards are met
  • Provides and supports service behaviors that are above and beyond for customer satisfaction and retention
  • Identifies the developmental needs of others and coaching, mentoring, or otherwise helping others to improve their knowledge or skills

Requirements:

  • Holds full Australian working rights or permanent residency
  • Possesses a Certificate III or IV in Commercial Cookery
  • Brings proven experience in luxury hotels, banqueting, and premium dining
  • Has a strong background in managing diverse, high-performing culinary teams
  • Is confident in using computer-based systems and kitchen technologies
  • Demonstrates sound knowledge in food safety standards, ordering, and cost control
  • Leads with passion, discipline, and a commitment to excellence in every detail
