The Executive Pastry Chef oversees all pastry and bakery operations within the hotel, ensuring that each creation reflects the quality, creativity, and attention to detail synonymous with Four Seasons standards. This hands-on leadership role combines artistry and management, guiding the pastry team to produce an exceptional array of desserts, breads, and baked goods that enhance the overall guest experience. The role also includes menu innovation, team development, and operational excellence across all outlets.
Job Responsibility:
Lead and coordinate daily pastry and bakery operations, ensuring consistent quality, presentation, and production efficiency
Develop and implement innovative, seasonal menus and signature desserts that align with the hotel’s culinary vision
Oversee preparation for all outlets, including restaurants, banquets, and in-room dining, maintaining excellence in taste and aesthetics
Manage ordering, inventory, and cost control for pastry ingredients and supplies
Maintain full compliance with Four Seasons, local, and federal food safety and sanitation standards
Inspect production areas and finished products regularly to ensure adherence to hygiene and quality standards
Partner with other culinary leaders and departments to ensure smooth communication and seamless service delivery
Requirements:
3–5 years of progressive pastry and bakery leadership experience, preferably in a luxury resort or five-star hotel environment
Degree or diploma in Culinary Arts, Patisserie, or a related discipline
equivalent professional experience will be considered
Proven expertise in pastry design, chocolate and sugar work, viennoiserie, plated desserts, and modern pastry techniques
Strong leadership and organizational skills, with the ability to motivate and develop a large, diverse team
Excellent understanding of food safety, allergen management, and sanitation practices
Creativity, precision, and a keen eye for detail to deliver visually stunning and memorable pastry creations
Flexibility to work varying schedules, including weekends and holidays
You must possess the legal right to work in Italy and have fluency in English and Italian
