Job Responsibility

  • Plan, organize, develop, inspire and direct the overall operation of Dining Services
  • Assure that delicious quality nutritional services are provided
  • Ensure the department is maintained in a clean, safe and sanitary manner
  • Determine how food should be presented and create decorative food displays
  • Standardize methods in which work will be accomplished
  • Assist in planning regular and special diet menus as prescribed by the attending physician
  • Assure that food is available for preparation
  • Perform administrative requirements such as completing necessary forms, reports, evaluations, studies, etc.
  • Coordinate dining services with other departments as necessary
  • Develop and maintain a good working rapport with all community staff
  • Ensure that department staff, residents, visitors, etc., follow established policies and procedures at all times
  • Delegate authority, responsibility, and accountability to other responsible department staff
  • Establish dining service production lines to assure that meals are prepared on time

Requirements

  • Extensive experience in providing fine dining in a variety of venues
  • Culinary degree from an accredited institution
  • 5 years of dietary/dining service experience in a supervisory capacity in a restaurant, hospital, health care/senior living facility
  • Training/education in cost control, food management, and/or diet therapy for healthcare residents

  • In the role of Executive Chef, you are responsible for the day-to-day operations and staffing for the kitchen and dining venue in the community
  • You drive a culture of hospitality and ensure that residents' tastes are indulged and their suggestions implemented
  • You act as a manager on duty as required
  • Responsible for interviewing, hiring, training, developing, and performance managing assigned staff
  • This includes scheduling of hours, breaks, and meal periods
  • Maintain monthly and annual budgets for the Culinary Services department, including producing written documentation of monthly spend on food, supplies, and labor
  • Maintain the appropriate inventory of kitchen supplies, small wares, and table ware
  • Responsible for ensuring that purchasing standards are maintained and that appropriate vendors are used at all times
  • Maintain strong and positive relationships with all vendors
  • Ensure that all food is prepared, stored, and served according to Company standards and legal requirements
