Maintains kitchen work areas and equipment and utensils in clean and orderly condition. The Dish Machine Operator is responsible and accountable for ensuring the cleanliness and sanitization of dishes, tableware, glassware, pots, pans, and utensils through manual and machine cleaning methods. Additionally, dishwashers are expected to keep dishwashing areas clean and safe.
Job Responsibility:
Scrape, rinse, and load dishes and utensils into dish machine
Wash and sanitize all pans, utensils, and dishes properly in the three bay sink as directed
Manually wash pots and equipment that cannot be run through dish machine
Clean, sanitize, and maintain dish machine
Unload dishes and utensils from dish machine and organize them properly
Empty trash containers regularly
Sweep, mop, and remove trash, recycling, and compost from all unit areas as needed and during assigned times
Service unit dining rooms
Aid in cleaning and sanitizing tables and chairs as needed
Clean and sanitize high touchpoints in the dining room, front-of-house, and back-of-house
Take and Document temperatures of the dish machine and three bay sink on an hourly basis
Record and test every red sanitizer solution bucket’s strength every 4 hours or when it becomes soiled
Change every green soapy water buckets every 2 hours or when needed
Perform additional cleaning duties as requested
Communicate often, clearly, and professionally with co-works and management
Uphold all required safety, service, and hygiene protocols
Ensuring compliance with all local and state health and safety regulations
Requirements:
High school diploma or equivalent
Previous work experience would be beneficial
Ability to interact with all levels of staff including management
Ability to work flexible hours, including nights, weekends, and holidays, in addition to normal business hours
Ability to read and interpret documents such as safety rules, operating and maintenance instructions and procedure manuals
