Reporting to the Assistant General Manager, the Director of Food & Beverage provides strategic leadership and operational direction for Food & Beverage operations at JACK Cleveland Casino while upholding JACK Entertainment’s service culture and core values. This role oversees the full scope of F&B operations—including service, food court outlets, culinary, stewarding, Starbucks, and beverage programs—and ensures an exceptional guest experience, strong financial performance, and continuous improvement across the division.
Job Responsibility:
Oversee daily operations across all venues, including restaurants, bars, food court outlets, Starbucks, culinary, and stewarding teams
Lead all aspects of talent strategy for the Food & Beverage division, ensuring the recruitment, retention, and development of high-performing team members at all levels
Develop and implement operational strategies, policies, and procedures that enhance efficiency, elevate guest satisfaction, and drive revenue
Champion JACK’s service culture by fostering a guest-focused environment across all F&B teams
Monitor guest feedback, identify trends, and implement solutions to enhance the overall dining and beverage experience
Maintain a strong floor presence during peak business periods to support staff and engage guests
Create and manage departmental budgets, forecasts, and financial plans to achieve revenue and profitability targets
Review and analyze financial reports, labor metrics, cost of goods, and productivity to optimize performance
Evaluate product offerings, pricing, and vendor relationships to ensure quality and cost-effectiveness
Responsible for the effective use of waste management program in all areas
Partner with HR to design and deliver training programs focused on service excellence, compliance, leadership skills, and technical competencies
Foster a culture of accountability, recognition, and empowerment where team members feel valued, engaged, and motivated to excel
Ensure all leaders within the department model JACK Entertainment’s values and cultivate a positive, collaborative workplace environment
Ensure effective inventory and cost-control systems are established, monitored, and continuously improved to support financial goals
Oversee regular sanitation inspections and maintain a comprehensive sanitation and food-safety training program for all team members
Ensure all team members are equipped with the proper tools and equipment required to perform their roles efficiently, and that all equipment is properly maintained and in good repair
Establish and uphold procedures that ensure strict compliance with federal, state, and local regulations, as well as all internal controls and company standards
Oversee development and execution of menus, beverage programs, promotions, and service initiatives
Collaborate with culinary and beverage leaders to ensure offerings meet quality, creativity, and brand expectations
Ensure all outlets maintain visually appealing, clean, and well-organized environments
Supports F&B leadership to ensure staff is scheduled properly and aligned with business volumes
Partner with Marketing, Finance, HR, and Gaming Operations to support company initiatives and cross-departmental needs
Participate in strategic planning, property-wide initiatives, and leadership meetings
Promote and uphold the company’s mission, values, and ethical standards in accordance with the JACK Entertainment Code of Conduct
Requirements:
Ability to stand and walk for extended periods
Must be able to respond calmly and make rational decisions when handling team member conflicts
Must be able to maneuver throughout all areas of the property and from floor to floor either by stairways (minimum of 20 steps) or escalator
Must be able to lift and carry up to 50 lbs. and perform physical tasks including pushing, pulling, reaching, bending, twisting, stooping, and kneeling as necessary
Must be able to respond to visual and auditory cues in a fast-paced environment
Must possess the manual dexterity required to operate a computer, point-of-sale systems, and other standard office or operational equipment
Must be able to work in environments that may include dust, loud noises, bright lights, and fluctuating temperatures
Ability to work flexible hours, including nights, weekends, and holidays
Ability to manage multiple projects and priorities simultaneously while remaining flexible and effective amid shifting demands and unexpected challenges
Strong verbal and written communication skills, with the ability to convey information clearly and professionally across all levels of the organization
Demonstrated ability to build positive relationships and work effectively with team members at all levels, from frontline staff to senior leadership
Skilled in handling complex, sensitive, and emotionally charged issues with professionalism, discretion, and sound judgment
Must be able to read, write, speak, and understand English
Bachelor’s degree in Hospitality, Business Administration, or related field preferred
Minimum 5–7 years of progressive Food & Beverage leadership experience, preferably in a casino, hotel, or high-volume entertainment environment
Strong financial acumen with proven ability to manage budgets and drive profitability
Current certifications in food safety and responsible alcohol service (or ability to obtain)
Proficient with POS and Microsoft Office products
Must be 21 years of age
Ability to obtain a Gaming Occupational License within the State of Ohio
