Four Seasons Hotel Macao is looking for a Director of Food & Beverage. This role is reporting to the Hotel Manager, this dynamic role oversees all operational, financial and people related matters in Food & Beverage, leading Culinary, Restaurant, Bar, Room Service and Banqueting.
Job Responsibility:
Oversee the daily operations of the F&B Division, ensuring flawless execution at both operational and administrative levels
Lead all F&B departments to uphold Four Seasons quality standards, policies, and procedures
Maintain strong visibility during key service periods to support teams and elevate the guest experience
Serve as a key point of contact for guests and employees, ensuring a warm, personalized, and memorable experience
Monitor and interpret P&L statements, weekly reports, and labor reports, communicating insights to senior leaders including the Director of Finance
Develop annual revenue and expense plans, ensuring rational, data‑driven budgeting
Drive profitability through effective labor management, scheduling, menu engineering, purchasing, and inventory control
Contribute to the hotel’s annual marketing plan, collaborating across departments to maximize revenue and strengthen brand positioning
Provide dynamic leadership, coaching, and feedback to build high‑performing teams
Conduct annual performance reviews and maintain open communication with management on departmental progress
Lead recruitment efforts using Four Seasons Quality Criteria and the “Evolve Interview Guide,” ensuring candidates align with our culture and standards
Create development and succession plans for current and future leaders
Build strong relationships with guests, regulars, and group contacts to deliver personalized, high‑touch service
Ensure thoughtful daily in‑room amenities and timely follow‑up on all guest requests
Communicate proactively with all hotel departments regarding business trends, special events, and VIP or group arrivals
Collaborate with the executive leadership team to set strategic and operational direction for the F&B Division
Maintain strong internal relationships across the hotel, as well as with owners, suppliers, and contractors
Stay ahead of industry trends, setting benchmarks and identifying opportunities to enhance performance and innovation
Requirements:
Minimum 3 years of experience as a Director of Food & Beverage in a luxury 5‑star hotel, with a proven ability to maintain exceptional quality while operating at high volume
Bachelor’s degree in Hospitality Management, Business, or a related field (preferred)
Fluency in Mandarin and English
Strong commercial acumen, leadership, and team management skills, with the ability to lead, motivate, and inspire team members
Strong communication and customer service skills, possess problem-solving abilities, and have financial acumen
