The Director of Food and Beverage forms part of the Executive team who collectively make key strategic and operational decisions for the Resort. The Director manages the Food & Beverage Operation which includes all restaurants, bars & lounges, banquets, room service and private bars.
Job Responsibility:
Direct and oversee all aspects of the organization's food and beverage planning and service
Coordinate the selection, training, development, and evaluation of employees and managers in the Food & Beverage Division
Educate and train all team members in compliance with federal, state and local laws and safety regulations
Establish long-term strategic planning for the Food & Beverage Division
Control labor and operating expenses through effective planning, budgeting, purchasing decisions, policy making, and inventory control
Assist with establishing and achieving quality and guest satisfaction goals
Manage day-to-day staffing requirements, plan and assign work, and establish performance and development goals for team members
Be visible in the operation, recognize and maintain relationships with regular guests as well as cultivate relationships with new patrons
Participate in preparation of the hotel's strategic and marketing plans
Prepare the Food and Beverage Department budget
Work closely with the General Manager and Planning Committee to design effective menus, collateral, amenity options and marketing campaigns
Communicate with employees and managers to ensure operational needs are met
Comply with Four Seasons’ Category One and Category Two Work Rules and Standards of Conduct
Requirements:
Currently holds a Director of Food and Beverage title
5 to 7 years at the Department Head level in previous luxury resort/hotel experience
Solid knowledge of food & beverage
Strong wine knowledge
Creative, ambitious, and strong business acumen
Strong work ethic and people-management skills
A college degree preferably specializing in hotel/restaurant management or business administration, or equivalent experience
Excellent written and verbal communication skills
Ability to remain calm under pressure and make effective decisions in emergency situations
