Job Description:

Accountable for the quality, consistency and production of the specialty restaurant kitchen. Exhibits culinary talents by personally performing tasks while leading the staff and managing all food related functions. Coordinates menus, purchasing, staffing and food preparation for the property's specialty restaurant. Works with team to improve guest and employee satisfaction while maintaining the operating budget.

Job Responsibility:

  • Develop and design new applications and menu items for specialty restaurant
  • Supervise specialty restaurant kitchen shift operations
  • Maintain food preparation handling and storage standards
  • Plan and manage food quantities and plating requirements
  • Develop daily and seasonal menu items
  • Prepare and cook foods of all types
  • Check quality of raw and cooked food products
  • Create decorative food displays
  • Lead and coordinate activities of cooks and kitchen staff
  • Manage day-to-day kitchen operations
  • Set and support achievement of kitchen goals
  • Ensure exceptional customer service
  • Handle guest problems and complaints
  • Conduct training for specialty restaurant staff
  • Manage employee progressive discipline procedures
  • Participate in employee performance appraisal process

Requirements:

  • High school diploma or GED
  • 4 years experience in culinary, food and beverage, or related professional area
  • OR 2-year degree from accredited university in Culinary Arts, Hotel and Restaurant Management, or related major
  • 2 years experience in culinary, food and beverage, or related professional area
  • Knowledge of food preparation handling and storage standards
  • Ability to develop and design new applications and menu items
  • Supervisory experience in kitchen operations
  • Understanding of food safety and compliance with applicable laws
  • Ability to estimate daily production needs
  • Experience in food presentation and decorative displays
  • Leadership and team management skills
  • Customer service orientation
  • Training and development skills
