Job Responsibility

Prepare, produce, and plate high-quality pastry and dessert items in line with the restaurant’s standards
Support the Executive Pastry Chef in the smooth daily running of the pastry kitchen
Maintain consistency in taste, presentation and texture across all dishes
Contribute creative ideas for menu development and seasonal specials
Ensure all pastry operations follow food safety and hygiene standards
Assist in training and guiding junior team members
Work collaboratively with the wider kitchen team to support service
Manage mise en place efficiently to deliver a flawless service
Maintain a clean, organised and well structured work environment
Support pastry production for other parts of the hotel when required

Job Responsibility

Produce laminated doughs including croissants, viennoiserie, puff pastry, and breakfast pastries to the highest standard
Manage all stages of lamination, fermentation, proofing, and baking with precision and consistency
Ensure all products meet Four Seasons standards for taste, texture, and presentation

Job Responsibility

Run the pastry section independently, from daily planning and mise en place through to service and close-down
Lead pastry production for events, functions, and hospitality bookings, with additional support for restaurant and café service
Deliver desserts and baked items to agreed standards of quality, consistency, and presentation
Plan production in line with event schedules and service requirements
Manage stock rotation, storage, labelling, and temperature control (FIFO)
Maintain high standards of cleanliness, organisation, and food safety
