Job Description:

To assist the Deli & Bakery Manager with the day-to-day operation of the hot & cold deli and the fresh food offering on-site. To assist the Manager in ensuring delivery of all delicatessen and fresh food targets (in terms of Food Quality, Customer Service, Sales, Costings, Profitability, and compliance with Hygiene Standards) through the effective management of the delicatessen and bakery area and its personnel.

Job Responsibility:

Assist the Deli & Bakery Manager with day-to-day operation of hot & cold deli and fresh food offering
Ensure delivery of all delicatessen and fresh food targets (Food Quality, Customer Service, Sales, Costings, Profitability, Hygiene Standards)
Manage delicatessen and bakery area and its personnel

Requirements:

Assist the Deli & Bakery Manager with day-to-day operation
Ensure delivery of all delicatessen and fresh food targets
Ensure deli area provides variety of fresh, high-quality foods
Involved in recruitment, training, and cross-training of personnel
Ensure delicatessen standards consistently improve
Plan for market changes and demands
Ensure delicatessen promotions managed appropriately
Ensure all customer complaints dealt with appropriately
Ensure HACCP standards implemented and record sheets maintained
Ensure customer service levels maintained
Assist with operation to meet food cost targets
Assist in managing internal cleaning program
Assist with food ordering
Ensure overheads controlled and minimised
Ensure delicatessen and bakery sales maximised
Assist in ensuring delicatessen margins managed appropriately
Promote sales and achieve sales targets
Assist in recruitment, training, and development of personnel
Maintain training records
Manage performance of delicatessen area
Ensure delicatessen team motivated
Ensure team complies with hygiene requirements
Assist with staff rostering
Ensure effective HACCP control systems in place
Ensure policies and procedures about fresh food implemented
Ensure area operates within relevant legislation
Ensure all relevant record sheets completed
Ensure up to date on HACCP and food safety
Assist with stock control, dating, and rotation
Contribute to menu planning & development
Ensure pre-agreed menus adhered to
Ensure effective stock control systems in place
Ensure wastages maintained at minimum
Identify areas of stock leakage
Undertake other additional duties as assigned
Live in Ireland and allowed to work here
