Job Description

To assist the Deli & Bakery Manager with the day-to-day operation of the hot & cold deli and the fresh food offering on-site. To assist the Manager in ensuring delivery of all delicatessen and fresh food targets (in terms of Food Quality, Customer Service, Sales, Costings, Profitability, and compliance with Hygiene Standards) through the effective management of the delicatessen and bakery area and its personnel.

  • Ensure delivery of all delicatessen and fresh food targets (Food Quality, Customer Service, Sales, Costings, Profitability, Hygiene Standards)
  • Manage delicatessen and bakery area and its personnel

  • Assist the Deli & Bakery Manager with day-to-day operation
  • Ensure delivery of all delicatessen and fresh food targets
  • Ensure deli area provides variety of fresh, high-quality foods
  • Involved in recruitment, training, and cross-training of personnel
  • Ensure delicatessen standards consistently improve
  • Plan for market changes and demands
  • Ensure delicatessen promotions managed appropriately
  • Ensure all customer complaints dealt with appropriately
  • Ensure HACCP standards implemented and record sheets maintained
  • Ensure customer service levels maintained
  • Assist with operation to meet food cost targets
  • Assist in managing internal cleaning program
  • Assist with food ordering
  • Ensure overheads controlled and minimised
  • Ensure delicatessen and bakery sales maximised
  • Assist in ensuring delicatessen margins managed appropriately
  • Promote sales and achieve sales targets
  • Assist in recruitment, training, and development of personnel
  • Maintain training records
  • Manage performance of delicatessen area
  • Ensure delicatessen team motivated
  • Ensure team complies with hygiene requirements
  • Assist with staff rostering
  • Ensure effective HACCP control systems in place

  • Ensure up to date on HACCP and food safety
  • Assist with stock control, dating, and rotation
  • Contribute to menu planning & development
  • Ensure pre-agreed menus adhered to
  • Ensure effective stock control systems in place
  • Ensure wastages maintained at minimum
  • Identify areas of stock leakage
  • Undertake other additional duties as assigned
  • Live in Ireland and allowed to work here

  • Plan for market changes and demands as they arise – seasonality and local activity
  • Ensure delicatessen promotions are managed appropriately with adequate costing analysis
  • Ensure all customer complaints are dealt with in the appropriate manner
  • Ensure overall customer service levels within the area are maintained at the required standard and up-selling of add-on items where possible
  • Assist the Deli Manager with operation of deli to meet pre-set food cost targets through staff training, portion control, waste control, etc
