Job Responsibility:
Prepare breakfast, lunch, and dinner food items per guest order
Work all stations on the line (grill, sauté, cold line)
Prepare food items according to guest orders following recipe cards and standards
Complete mis en place and set-up station for service
Manage the temperature of meat and fish
Start food items prepared ahead of time
Scale recipes to the gram
Operate, maintain and properly clean kitchen equipment
Date all food containers and rotate as per policies
Check pars for shift use
Return unused food items to storage
Assist in setting up plans to correct food cost problems
Control food waste, loss and usage
Comply with Four Seasons’ Work Rules and Standards of Conduct
Work harmoniously with co-workers and supervisors
Assist in prep work for the next shift
Requirements:
High school education, cooking school or culinary institute education or equivalent experience
Minimum three years culinary
Intermediate culinary knowledge
Ability to operate, maintain and properly clean deep fryer, broiler, stove, steamer, food processor, mixer, slicer, oven, steam table, tilt kettle, waffle iron, flat top grill
Proficient knife skills and ability to multi-task
Flexible schedule, ability to work weekends and holidays
Must possess legal work authorization in the United States
