Job Responsibility:

  • Prepare food items per guest orders following recipe cards and standards
  • Complete mise en place and set-up station for breakfast, lunch, and/or dinner service
  • Start food items prepared ahead of time, not beyond estimated needs
  • Operate, maintain and properly clean kitchen equipment
  • Date all food containers and rotate as per policies
  • Check pars for shift use, determine preparation, freezer pull and line set up
  • Note out-of-stock items or possible shortages
  • Return unused food items to designated storage areas
  • Comply with Four Seasons’ Category One and Category Two Work Rules and Standards of Conduct
  • Work harmoniously and professionally with co-workers and supervisors
  • Assist in prep work of vegetables and condiments as required for next shift

Requirements:

  • High school education, cooking school, or culinary institute education or equivalent experience
  • Minimum 1 year of culinary or related work experience preferred
  • Basic culinary knowledge is expected
  • Average reading, writing, and oral proficiency in the English language

  • Assist in keeping buffet stocked
  • Return all food items not used on next shift to designated storage areas, being sure to cover/date all perishables
  • Assist in setting up plans and actions to correct any food cost problems, control food waste, loss and usage per HEI Hotels and Resorts standards
  • Operate, maintain and properly clean deep fryer, broiler, stove, steamer, food processor, mixer, slicer, oven steam table, tilt kettle, waffle iron and flat top grill
  • Comply with attendance rules and be available to work on a regular basis
