Job Description

Construction & Fit-Out Manager to structure, pilot, and deliver all construction-related projects across the network, ensuring on-time restaurant delivery, controlled construction CAPEX, regulatory and technical compliance, and consistent execution quality across partners and sites. This role is fully dedicated to construction, renovation, and restaurant fit-out execution.

Job Responsibility

  • Lead restaurant construction, renovation, and conversion projects from feasibility and scoping to final handover
  • Build and manage construction project plans, coordinating internal and external stakeholders throughout the project lifecycle
  • Own restaurant delivery timelines, ensuring openings and re-openings are delivered as planned
  • Manage multiple projects in parallel across different formats and geographies
  • Establish construction and renovation budgets (CAPEX works)
  • Track costs throughout the project lifecycle, manage variations, and control budget deviations
  • Identify technical and economic optimisation opportunities to improve cost efficiency without compromising quality or compliance
  • Pilot and coordinate approved contractors and technical partners (TCE / MEP, kitchen installers, extraction specialists,...)
  • Monitor execution quality, timelines, and contractual commitments
  • Contribute to the structuring, benchmarking, and continuous improvement of the construction partner panel
  • Act as the primary construction and fit-out point of contact for both franchise partners and company-owned restaurants
  • Advise and support franchise partners on construction standards, technical solutions, and constraints
  • Verify compliance with construction-related contractual obligations, technical standards, and ERP requirements
  • Take full ownership of construction and fit-out projects for company-owned restaurants, from scoping to final delivery
  • Ensure alignment between franchisees or internal teams, landlords, contractors, and internal stakeholders on all construction-related topics
  • Contribute to the selection and validation of restaurant equipment from a technical, financial, and durability perspective
  • Assess equipment options based on technical compatibility with building constraints, utilities capacity, and extraction requirements
  • Support equipment-related arbitrage to balance investment level, robustness, and long-term maintainability
  • Validate equipment layouts and technical interfaces in coordination with installers and contractors
  • Maintain consolidated construction project plans and timelines
  • Provide regular reporting on project progress (budget, planning, risks, delivery status)
  • Anticipate construction risks and blockers, implementing mitigation plans to ensure on-time and on-budget delivery

Requirements

  • 5+ years in restaurant construction / fit-out, concept development, or operational project management (QSR / fast-casual strongly preferred)
  • Strong command of kitchen technical environments, equipment, food safety, and day-to-day restaurant realities
  • Comfortable working with Construction, Design, Supply, and IT on plans, layouts, and fit-outs
  • Proven ability to structure, drive, and deliver complex cross-functional projects end-to-end
  • Fluent in French and English
