Job Description

Lead the heartbeat of the park. At Parkdean Resorts, we’re searching for a proactive and inspiring Complex Manager to take charge of our multi‑outlet food, beverage, and retail operations. This is a high‑impact leadership role where you’ll shape exceptional guest experiences, drive commercial success, and build talented teams across a vibrant, fast‑paced environment. As our Complex Manager, you’ll be the senior leader for all food & beverage and retail operations on park. You’ll maximise revenue, deliver outstanding service, and ensure all outlets operate efficiently, safely, and profitably. From team development to commercial performance, you’ll oversee every element of the operation, championing high standards and continuously identifying opportunities to grow and improve.

Job Responsibility

  • Leading, managing, and developing all food, beverage, and retail teams, creating a high‑performance, guest‑focused culture
  • Achieving budgets and margins across all outlets through strong stock control, payroll management, cash handling, and cost controls
  • Completing stock takes, line checks, audits, and reporting on results — taking corrective action when needed
  • Driving exceptional guest experiences by embedding service quality, consistency, and operational excellence
  • Recruiting, inspiring, training, and retaining high‑performing teams
  • Identifying opportunities to grow revenue and increase profitability across all F&B streams
  • Holding regular 1:1s and structured team meetings to support team performance and development
  • Acting as Duty Manager in the absence of the General Manager and contributing to the wider park leadership team
  • Ensuring full compliance with Health & Safety, food safety, licensing, and safeguarding policies

  • Strong commercial acumen, with confidence in managing budgets, margins, and KPIs
  • Experience recruiting, training, and developing people while fostering a positive and inclusive culture
  • The ability to lead effectively in a fast‑paced, high‑pressure setting
  • Excellent organisational, communication, and leadership skills
  • Flexibility to work varied shifts, including evenings, weekends, and bank holidays
  • A Personal Licence, SIA licence, and Food Hygiene Level 3 - or the willingness to obtain them with our full training and support
